Spicy Chickpea Salad Wraps

Ingredients:

- 1 can (15 oz) chickpeas, drained and rinsed

- 1/4 cup Greek yogurt

- 1 tablespoon tahini

- 1 tablespoon lemon juice

- 1 teaspoon Dijon mustard

- 1/2 teaspoon garlic powder

- 1/2 teaspoon paprika

- Salt and black pepper to taste

- 1/4 cup diced celery

- 1/4 cup diced red bell pepper

- 4 large whole wheat tortillas

- Fresh spinach leaves

Instructions:

Mash Chickpeas: In a bowl, lightly mash the chickpeas with a fork, leaving some whole for texture.

Prepare the Dressing: In another bowl, mix Greek yogurt, tahini, lemon juice, Dijon mustard, garlic powder, paprika, salt, and black pepper.

Combine Ingredients: Add the dressing to the mashed chickpeas, followed by the diced celery and red bell pepper. Mix well.

Assemble Wraps: Lay out the tortillas and place a handful of spinach leaves on each. Spoon the chickpea mixture onto the spinach and wrap tightly.

Serve: Cut the wraps in half and serve immediately or store in the refrigerator for later.
